Green gumbo, or “gumbo z’herbes,” holds a special place in Louisiana’s culinary heritage, traditionally served during Lent when Catholic communities abstained from meat. This “green gumbo” was originally made with whatever greens were available, often seven or more different varieties, and was believed to bring good luck for each type of green included. While most recipes call for four types of greens, this recipe includes five types of greens to bring you extra luck!
While traditional versions sometimes incorporated ham or seafood, our vegetarian interpretation honors the dish’s humble, plant-forward origins while delivering the same soul-satisfying depth that has made gumbo a cornerstone of Creole cuisine for centuries.
